Sodium metabisulfite (also commercially known as sodium pyrosulfite) is a white, free-flowing crystalline powder. When dissolved in water, the resulting liquid is known as sodium bisulfite (or sodium acid sulfite). Serving as a powerful reducing agent, it is widely utilized across a diverse range of industrial applications. Sodium metabisulfite remains stable in dry air and acts as a powerful reducing agent. However, when exposed to moisture, it readily oxidizes, liberating sulfur dioxide gas and causing the powder to cake (form lumps).
